1. Whisk together the sugar, flour, eggs, lemon zest, and lemon juice until sugar is dissolved
2. Let sit for 10 minutes before whisking together again and pouring over the baked shortbread base
3. Bake for another 20 min at 350 degrees or until top is slightly browned
